Recipe: Sweet Soy Sauce



Recipe Preparation

  1. In a heavy bottomed, nonreactive saucepot, add the soy, sugar, tomato paste, chipotle purée, and lime juice.
  2. Whisk together over high heat until the sugar dissolves and the liquid reaches a boil.
  3. Once it boils, remove from the heat.
  4. Using a stick blender, sift in the tapioca starch and purée the contents off the heat until smooth and viscous.
  5. Strain through a fine mesh strainer and whisk in the lime zest.
  6. Store in deli containers or squeeze bottles as desired.
