Recipe: Bourbon Apple Brine

Ingredients
- 2 gal. Harvest Valley Apple Juice
- 1 qt. GFS Apple Cider Vinegar
- 1 qt. Kentucky Bourbon
- 3 c. GFS Light Brown Sugar
- 2 c. Molasses
- 2 oz. Pork Base
- 2 Tbsp. Kosher Salt
- 1 tsp. Trade East White Ground Pepper
Recipe Preparation
Place all ingredients in a 8″ full stainless steel hotel pan. Whisk until all of the ingredients have dissolved. Divide into two or three separate pans, if necessary, or place in a nonreactive storage container. Cover and refrigerate until needed.
