Recipe: Bourbon Apple Brine

Ingredients

2 gal. Harvest Valley Apple Juice
1 qt. GFS Apple Cider Vinegar
1 qt. Kentucky Bourbon
3 c. GFS Light Brown Sugar
2 c. Molasses
2 oz. Pork Base
2 Tbsp. Kosher Salt
1 tsp. Trade East White Ground Pepper

Recipe Preparation

Place all ingredients in a 8″ full stainless steel hotel pan. Whisk until all of the ingredients have dissolved. Divide into two or three separate pans, if necessary, or place in a nonreactive storage container. Cover and refrigerate until needed.
