Turkey Confit



Recipe Preparation

  1.  Combine salt, sugar, and chili flakes and apply to turkey drumsticks.
  2. Refrigerate for 4 hours, or overnight.
  3. Rinse turkey and pat dry.
  4. In a deep roasting pan, place turkey legs and remaining ingredients.
  5. Note* ensure that the turkey is submerged in the canola oil.
  6. Cover the pan with aluminum foil.
  7. Place in 325°F (160°C).
  8. oven for 3 hours until fork tender.
  9. Separate turkey and strained oil overnight before use.
