Shrimp Ceviche

Recipe Preparation

  1. place salt and sugar in water in pot and bring to a boil.
  2. Place Shrimp in boiling water and mix for 2 minutes
  3. Dump the water and shrimp into colander and run cold ice water over the hrimp until they are chilled
  4. When cool take tail off and cut each shrimp into 3 pieces
  5. Peel the avocado and sice into 1/2 inch cubes
  6. Slice the shallots thin and soak in butter milk for 1-2 minutes
  7. Place in seasoned flour and fry in fryer at 350*F ( 176*C) until golden brown
  8. Slice the jalapeno thinly and place the shrimp, salsa and avocado in bowl and mix
  9. Place everything in a cold bowl for serving.
  10. Top with diced avocado and crispy shallots and garnish with Plantain chips
