Roasted Rhubarb Mostarda

Ingredients
- 2 cup Frozen Rhubarb (Rhubarb)
- 1/4 cup Sugar (Rhubarb)
- 1/2 cup Yellow Mustard Seeds (Mostarda)
- 3/4 cup White Wine Vinegar plus 1/4 cup (add more as needed) (Mostarda)
- 1/2 tsp. Salt (Mostarda)
- 2 Tbsp. Honey (Mostarda)
Recipe Preparation
Rhubarb:
- In a mixing bowl, coat rhubarb with sugar.
- Spread the mixture evenly on the lined sheet pan.
- Roast at 350°F (175°C).
- over for 30 minutes or until rhubarb is slightly caramelized.
- Cool.
Mostarda:
- Soak mustard seeds in water for 1 hour.
- Strain and rinse.
- Combine all ingredients in a saucepan on medium-high heat and reduce the mixture by about half.
- Allow it to cool.
Rhubarb Mostarda:
- Combine the remaining 1/3 cup vinegar and roasted rhubarb.
- Refrigerate overnight before serving.
