Prepare the Chicken:

  1. Preheat the grill to medium-high heat.
  2. Brush chicken breasts with olive oil and season with salt, black pepper, and smoked paprika.
  3. Grill for 5-6 minutes per side until internal temperature reaches 165°F (74°C).
  4. Let rest for 5 minutes, then dice into small cubes.
  5. Combine the diced chicken with remaining ingredients to form the chicken salad.
