Recipe: Grilled Balsamic Cremini Mushrooms



Recipe Preparation

  1. Pre-heat a char-grill to high and a convection oven to 350°F at high fan.
  2. Cut the cremini mushrooms into fourths leaving on the stem. Place in a stainless steel bowl.
  3. Add the oil to the mushrooms and toss to coat evenly.
  4. Char-grill the mushrooms, marking them on the front and the back, about 5 minutes.
  5. Remove the mushrooms from the grill and place them back in the mixing bowl.
  6. Add the garlic and thyme to the mushrooms, dispersing it equally.
  7. Add the balsamic glaze and toss the mushrooms to coat.
  8. Place the mushrooms on a sheet tray lined with parchment and roast in the convection oven for 5 minutes to caramelize.
  9. Serve immediately.

NOTE: For service, prep through Step 7, and then retherm and caramelize the mushrooms in the oven to order.
