Korean Gochujang Chicken Wings

Recipe Preparation

  1. Peel long strips of cucumber and heavily salt letting the strips sit in a colander for 15 minutes
  2. Squeeze liquid out of cucumber
  3. Mix vinegar and agave together
  4. Mix cucumber, pepper, cilantro and vinegar mixture together and let sit at least 30 minutes before using
  5. Preheat oven to 400*c (204*c)
  6. Pat the drumettes dry with paper towel
  7. Mix baking soda with BBQ seasoning
  8. Season drumettes with BBQ Seasoning mix and put onto a parchment lined baking sheet and bake for 40-45 minutes turning at least once. Looking for internal temperature of 175 at the bone
  9. Remove from oven and let stand for 5 minutes. Transfer wings to bowl and toss with sauce.
  10. For plating put sauce on plate, with cucumber salad, drumettes and garnish with toasted sesame seeds, a little bit of BBQ seasoning, and cilantro oil
