Ham & White Bean Polpette

Recipe Preparation

  1. Roughly chop ham in a food processor
  2. Mash beans with potato masher
  3. Rough chop baby kale blend
  4. Add ham, beans, garlic, kale, mustard, onion and 1 egg into a bowl and mix well
  5. Form into 2oz balls and chill for 10 minutes.
  6. Place ¾ c flour in one shallow pan
  7. Crack the remaining egg and whisk together with ¼ c water into another shallow pan
  8. Mix panko, remaining flour and lemon pepper seasoning in a final shallow pan
  9. Take each ball and lightly press to form a patty. Dip each patty first in flour, then egg, followed by crumbs.
  10. Heat sauce and reserve warm
  11. Heat oil in a large frypan over medium heat.
  12. In small batches, cook the patties for 2-3 minutes each side until golden and crisp all over.
  13. Serve 3 on each plate with 2 oz of reserved warm sauce
