Recipe Preparation

  1. Sweat the jalapeno in a small pot. 
  2. Add the thyme sprigs, corn and a pinch of salt and black pepper. 
  3. Deglaze with white white and reduce to au sec.
  4. Add the heavy cream and bring to a simmer. 
  5. Remove from heat and puree in a blender. 
  6. Adjust seasoning, and feel free to add a touch of honey if needed. 
  7. Pass through a chinois strainer and set aside. 
  8. Cool and store for later use, or keep warm for immediate use.
