Recipe Preparation

  1. Line a sieve with a layer of cheesecloth and set over a bowl.
  2. Spoon ricotta into the sieve. 
  3. Cover and let the ricotta drain in the refrigerator overnight.
  4. Beat the ricotta and confectioners sugar until fluffy, using an electric mixer on medium speed.
  5. Beat in chocolate chips, vanilla, lemon juice and orange zest. 
  6. Cover with plastic wrap and refrigerate.
  7. Pipe the filling into the prepared cannoli shells
