Beef Barbacoa Taco



Recipe Preparation

  1. Place barbacoa in a hotel pan and cook until internal temperature reaches 155°F (68°C).
  2. Let Barbacoa cool enough to handle and remove from the liquid.
  3. Using a chef knife give the barbacoa a rough chop and return to the liquids it was cooked in.
  4. Brush tortillas with vegetable oil and toast on a grill.
  5. Place tortillas, 2 each on a taco stand and fill with about 2 oz of barbacoa into each.
  6. Add chopped onion and cilantro.
  7. Top with grated cotija cheese and avocado.
