Beef Barbacoa Taco

Ingredients
4 oz Beef Barbacoa
4 ea Corn Tortilla
1/2 tsp Onion
1/4 tsp Cilantro
2 slice Avocado
1/8 tsp Cotija Cheese
1 tsp Vegetable Oil
Recipe Preparation
Place barbacoa in a hotel pan and cook until internal temperature reaches 155°F (68°C).
Let Barbacoa cool enough to handle and remove from the liquid.
Using a chef knife give the barbacoa a rough chop and return to the liquids it was cooked in.
Brush tortillas with vegetable oil and toast on a grill.
Place tortillas, 2 each on a taco stand and fill with about 2 oz of barbacoa into each.
Add chopped onion and cilantro.
Top with grated cotija cheese and avocado.
