Ingredients

Recipe Preparation

  1. Boil a medium-sized pot of water and add in the potatoes until fully cooked.
  2. Cut a small piece of potato off the top and bottom of each baby red; scoop out a small amount from the top, just enough to fill.
  3. In a medium bowl combine chopped salmon, half of the chopped chives, lemon juice, and Greek yogurt.
  4. Season with salt and pepper. Spoon equal amounts of the mixture into the 12 potatoes.
  5. Place three potatoes on a small appetizer plate; garnish with a small spoonful of caviar and a pinch of chopped chives.
