Mix the bacon jam and mayo and set aside. Toast the bun until golden brown.
Season both patties with the Chef’s Blend to taste. Grill burgers to desired doneness and melt the sliced Gouda on top.
Build the burger – smear the bacon jam mayo on the bottom and top buns. Place both patties on the bottom bun. Top with onion slices, roasted tomatoes, and arugula. Serve.
