Make the Custard Base:

  2. Meanwhile, whisk together egg yolks, granulated sugar, mashed ripe banana, vanilla extract, and salt in a mixing bowl.
  3. Temper the yolk mixture by slowly adding the hot cream, whisking constantly.
  4. Strain the mixture through a fine sieve into a clean container to remove solids and create a smooth custard.
