Ingredients
2 Tbsp Jalapeno, chopped
1 ½ cups Roasted Corn
12 sprigs Thyme
¾ cup White Wine
3 cups Heavy Cream
Honey, to taste, if desired
Recipe Preparation
Sweat the jalapeno in a small pot.Â
Add the thyme sprigs, corn and a pinch of salt and black pepper.Â
Deglaze with white white and reduce to au sec.
Add the heavy cream and bring to a simmer.Â
Remove from heat and puree in a blender.Â
Adjust seasoning, and feel free to add a touch of honey if needed.Â
Pass through a chinois strainer and set aside.Â
Cool and store for later use, or keep warm for immediate use.
