As a Full Time Commissary Meat Cutter you’ll have a great opportunity to learn and even greater opportunity for advancement! Meat cutters use an array of sharp knives and tools that they must keep sharp and clean, and they must be strict about cleanliness as mandated by the company. Cutters are responsible for trimming the raw material to the desired specifications/yield targets.

Essential Functions of the job:

• Works with supervisors and managers to schedule production.

• Cuts, trims, and processes fresh meat products to sell.

• Inspects and removes defects, bruises, or blemishes from the product.

• Separates meats and by-products (no cross-contamination)  into specified containers and seals containers as needed. 

• Uses knives, cleavers, or other equipment to perform trimming.

• Weighs product and tag containers for weight and contents.

• Reduces processing costs but accurately cuts and sizes portions with good yields and meets company specs.

• Perform quality control checks and communicate with supervisors and managers regarding any defects.

• A meat cutter must follow and maintain all Quality Assurance, HACCP, SQF requirements, and Occupational Health and safety regulations.

• Maintaining cleanliness and hygiene of the work area and the cutting knives and equipment.

• Perform any other duties as required.

 Does this sound like you?

• At least 18 years of age

• A minimum of one year of experience as a professional meat cutter and/or High-end meat processing experience is strongly preferred

• Food Safety & Science Certification, Culinary Meat Selection & Cookery Certification, Meat Evaluation Certification, or other relevant certification or training preferred

• High school graduate or equivalent (GED)

• Able to multitask

• Work on your own or within a team

• Basic math and computer skills

• Able to lift up to 50 lbs.
