Recipe: Sweet Soy Sauce

Ingredients
16 oz. Soy Sauce
32 oz. GFS Cane Sugar
½ oz. Gordon Choice Tomato Paste
¾ oz. Chipotle Peppers
2 ct. Markon Limes, zest and juice
½ oz. Tapioca Starch
Recipe Preparation
In a heavy bottomed, nonreactive saucepot, add the soy, sugar, tomato paste, chipotle purée, and lime juice.
Whisk together over high heat until the sugar dissolves and the liquid reaches a boil.
Once it boils, remove from the heat.
Using a stick blender, sift in the tapioca starch and purée the contents off the heat until smooth and viscous.
Strain through a fine mesh strainer and whisk in the lime zest.
Store in deli containers or squeeze bottles as desired.
