  1. Rinse the cilantro thoroughly to remove any dirt or debris. Pat dry with paper towels.
  2. Combine cilantro, olive oil, and salt in a blender. Blend until the mixture is smooth and the oil takes on a vibrant green color.
  3. Use a fine mesh sieve or cheesecloth to strain the oil into a clean jar, pressing on the solids to extract as much oil as possible. Discard the solids.
