  1. In a small saucepan, combine pineapple juice, brown sugar, and 2 tablespoons dark rum.
  2. Bring to a simmer. Reduce for 5-7 minutes until slightly syrupy.
  3. If needed, whisk in cornstarch and simmer until slightly thickened.
  4. Cool to room temperature.
