Recipe Preparation

  1. Spread a layer of cream cheese frosting between each cake layer.
  2. Frost the top and sides of the cake. Chill slightly to set.
  3. Spoon pineapple-rum glaze over the top of the frosted cake just before serving.
  4. Garnish with extra chopped pecans or dried pineapple if desired.
  5. For a plated dessert, serve slices with warmed glaze and a quenelle of vanilla bean gelato.
  6. Glaze may be served tableside or applied as a drip glaze around the rim for visual appeal.
