Camembert Cheesecake

Ingredients
1/3 C Grandulated Sugar
6 Tbsp Butter
1 tsp Vanilla Extract
1 C Flour
2 ea Cream Cheese, 8oz package softened
8oz Camambert, removed rind
1/2 C Sugar
2ea Egg
1 tsp Vanilla Extract
Garnish with Raspberries
Recipe Preparation
To prep the crust, preheat oven to 350* F
Beat sugar and butter in mixer until smooth
Add in the vanilla
Mix in flour until crumbly
press the crust into a springform pan, bottom and 1 inch on side
dock crust with a fork and bake 13-15 minutes
To start on the filling, beat the cream cheese and sugar in a mixer until smooth
Add in eggs 1 at a time on low speed
Remove rind from camembert & cut into 1/2 pieces
Add to cheesecake mixture, it will be lumpy
Add in the vanilla
Pour mixture into the cooled crust
Place cheesecake on a sheet pan, add water and bake 25 minutes
Cool the finished cheesecake on a rack at room temperature and refrigerate for 3 hours or overnight before serving.
