Farro Salad

Ingredients
1 cup Farro
4 cup Water
Pinch of Kosher Salt
½ cup Red Onion, 1/2 Julienne, 1/8th inch thick
¼ cup Cucumber, Quarted, Sliced 1/4 inch thick
1/8 cup Basil, Torn
2 fl oz Lime Juice
1 Tbsp Lime Zest
2 fl oz Extra Virgin Olive Oil
Recipe Preparation
In a dry medium sauce pot over medium heat add Farro. Stir constantly so the that Farro begins to toast and become fragrant. Toast for 1 minute.
Add water and salt. Increase heat to high and bring to a boil. Boil for roughly 20 minutes and begin tasting for doneness.
Drain through a sieve and let drain 5 minutes.
Add cooked Farro to a large bowl and add the rest of the ingredients.
Stir to combine and adjust seasoning. Use salad immediately or cool down for later use.
