Recipe Preparation

  1. In a large sauté pan, heat 2 Tablespoons oil over medium heat and sauté mushrooms until golden brown. Add sherry and kosher salt. Sauté another 2 minutes.
  2. Prebake flatbread in 375°F (190°C) oven for 10 minutes.
  3. Top with dressing, half of the sautéed mushrooms, mozzarella cheese, kale, and red onion.
  4. Bake for 8-10 minutes until crisp and golden brown.
  5. Top with dollops of ricotta. Cut and serve.
