Ingredients
2 lbs White Shrimp, peeled and deveined
1/2 cup Salt
1/2 cup Sugar
2 gal Water
3 cups Pico De Gallo
3 ea Avocados
4ea Shallots, peeled
1ea Jalapeno
1ea Plantain
Recipe Preparation
place salt and sugar in water in pot and bring to a boil.
Place Shrimp in boiling water and mix for 2 minutes
Dump the water and shrimp into colander and run cold ice water over the hrimp until they are chilled
When cool take tail off and cut each shrimp into 3 pieces
Peel the avocado and sice into 1/2 inch cubes
Slice the shallots thin and soak in butter milk for 1-2 minutes
Place in seasoned flour and fry in fryer at 350*F ( 176*C) until golden brown
Slice the jalapeno thinly and place the shrimp, salsa and avocado in bowl and mix
Place everything in a cold bowl for serving.
Top with diced avocado and crispy shallots and garnish with Plantain chips
