1 lb Sea Bass Butterfly Bronzini
1/4 ea Lemon
1.5 oz Basil Pesto Sauce
1 tsp Kosher Salt
1 tsp Ground Black Pepper
2 oz Sea Beans
2 oz Grape/Cherry Tomato Medley
1 Tbsp Extra Virgin Mediterranean Olive Oil
1 oz Fennel And Arugula Salad
Recipe Preparation
Season fish with salt and pepper.
Lay three slices of fresh lemon in the middle of the fish and brush the top and middle of the fish with pesto.
Place in the oven at 400°F (204°C) for approx. 10-12 minutes until cooked.
Sauté fresh sea beans and tomatoes right before the fish is ready to go out.
Serve over sea beans and tomatoes top with fennel arugula salad.
