Recipe Preparation

  1. Pour boiling water over raisins or currants and soak until plump. Drain and then
    dredge in flour and set aside.
  2. In a Stainless Steel bowl add the the first 6 ingredients.
  3. Stir ingredients until just incorporated and then knead 5-6 times (dough should
    be sticky).
  4. Knead in raisins or currants (whichever was used).
  5. Place dough in a greased loaf pan and sprinkle with sugar crystals.
  6. Bake at 350°F (190°C).
  7. for 1 hour. Check bread after 40 minutes. If it is getting
    too brown, then cover and bake for the remaining time.
  8. Bread is done when a toothpick comes out clean.
  9. Allow the bread to cool to room temperature before slicing.
  10. Best served with salted Kerrygold Butter.
