Recipe: Oven-Dried Tomato Halves

10 ct. Markon Roma Tomatoes
1 tsp. Extra Virgin Olive Oil
tsp. Coarse Kosher Salt
to taste Trade East Ground Black Pepper
Recipe Preparation
Preheat a convection oven to 175°F on low fan.
Rinse the tomatoes in water and dry on paper toweling.
Core the tomatoes and cut in half lengthwise
Toss the tomato halves with olive oil in stainless steel bowl. Season with salt and pepper.
Line a sheet tray with parchment
Spread the tomatoes evenly on the sheet tray, cut-side up
Bake for 3-4 hours, until the tomatoes have shrunk in size and concentrated.
