Spicy Cookie Ice Cream Sandwich

1. Take 4 oz. of ice cream and put it into a 2 ¾” ring mold and then refreeze.
2. While ice cream is freezing up again, preheat oven to 350°F and bake cookie pucks for 6-8 minutes, remove from sheet tray and then let cool.
3. Puy a cookie down on the table upside down, then put an ice cream puck and complete a sandwich with either cookie.
4. Refreeze for at least 20 minutes before serving.
