Restaurants looking to satisfy that need are turning to comfort foods and braised meats as a convenient and economical solution.<\/p>\n<p>Comfort foods grew more popular as pandemic stress increased, and it doesn\u2019t appear the desire is going away in 2021. Grocery giant <a href=\"https:\/\/www.kamcity.com\/namnews\/international\/americas\/kroger-outlines-2020s-top-food-trends-and-what-to-expect-in-2021\/\">Kroger is predicting<\/a> consumers will look for more easy-to-prepare comfort foods and global flavors in 2021. This spells an opportunity for restaurants to get creative and offer menu choices that go beyond what people are willing to prepare at home.<\/p>\n<p>One way to take comfort food to new heights is with braising. It\u2019s simply searing the protein\u2014beef, pork or chicken\u2014putting it in a roasting pan with a broth or sauce, covering it tightly and slow-cooking until it\u2019s fork-tender.<\/p>\n<h3>Nostalgia meets convenience<\/h3>\n<p>\u201cIt\u2019s the original \u2018set it and forget it\u2019 food,\u201d says Gordon Food Service Culinary Specialist Bill Barker. \u201cBraising is something we\u2019ve been talking about for a couple of years, and I don\u2019t think it\u2019s something that will ever go away.\u201d<\/p>\n<p>That\u2019s because it\u2019s <a href=\"https:\/\/www.smartbrief.com\/original\/2020\/11\/how-businesses-are-feeding-cravings-comfort-and-convenience-centric?utm_source=brief\">comforting and nostalgic<\/a>, like grandma\u2019s pot roast. For restaurants, it\u2019s convenient to prepare large quantities that can be used across many applications. Plus, Barker points out, it produces great flavor from less-expensive cuts of meat. <a href=\"https:\/\/gfs.com\/es-us\/ideas\/recipe\/sauerbraten-braised-short-rib\/\">Beef short ribs<\/a>, <a href=\"https:\/\/gfs.com\/es-us\/ideas\/popularity-pork\/\">pork shoulder<\/a> or <a href=\"https:\/\/gfs.com\/es-us\/ideas\/recipe\/braised-duck-french-dip\/\">poultry<\/a> are very affordable and versatile.<\/p>\n<p>\u201cI can use any braised meat in a sandwich, as a centerpiece for an entree, shredded in pasta dishes, or even add a little Hispanic flavor, stew it and turn it into a taco meat or burrito.\u201d<\/p>\n<p>Calling out braised meats and adding some creative flair elevates the perception on the menu, Barker says. You can draw a higher price, while providing generous portions and great flavor\u2014a value for the operator and the customer.<\/p>\n<p>Comfort foods and braised meats also work well for off-premise meals. \u201cMost braised products carry some kind of sauce with them, so it travels well because the sauce acts like an insulator to keep food hot,\u201d Barker says.<br
