Training and safety measures are unique to your business&#8211;design them to protect team members and customers, and demonstrate your commitment to a healthy environment. Dan Longton, President and CEO of TraitSet, a foodservice training provider, suggests areas to focus on as you prepare to reopen.<\/p>\n<p><strong>Safe staffing.<\/strong> <em>Education about safety is equally important to hospitality training. Consider:<\/em><\/p>\n<ul>\n<li>Develop a COVID-19 response leader<\/li>\n<li>Conduct training and testing on procedures<\/li>\n<li>Designate a team member to monitor each shift<\/li>\n<li>Implement employee health screening\/temperature checks<\/li>\n<li>Schedule team shifts so one exposed worker doesn\u2019t endanger the entire team<\/li>\n<li>Develop a plan to identify and contact exposed employees<\/li>\n<\/ul>\n<p><strong>Hand washing. <\/strong><em>Teach proper techniques as a first defense against spreading germs:<\/em><\/p>\n<ul>\n<li>Post signs on doors and near sinks<\/li>\n<li>Wash hands for 20 seconds using warm, soapy water<\/li>\n<li>Dry hands with a single-use disposable towel<\/li>\n<li>Use the towel to open doors, then properly dispose of towel<\/li>\n<li>Wash hands hourly, and apply alcohol-based sanitizer after customer contact<\/li>\n<\/ul>\n<p><strong>Social distancing.<\/strong> <em>Maintain team and customer safety by reducing unnecessary interaction:&nbsp;<\/em><\/p>\n<ul>\n<li>Where possible, provide work stations that maintain 6-foot distance<\/li>\n<li>Stagger breaks so employees avoid contact&nbsp;<\/li>\n<li>Space tables and seat unrelated guest parties 6 feet apart<\/li>\n<li>Provide marked waiting areas to assure distancing<\/li>\n<li>Mark traffic patterns on the floor to reduce guest contact<\/li>\n<\/ul>\n<p><strong>Personal protection equipment (PPE).<\/strong> <em>Address PPE use, whether the law requires it or not:<\/em><\/p>\n<ul>\n<li>Train team how to properly secure (and remove) a mask over the mouth and nose<\/li>\n<li>Educate team members about glove usage<\/li>\n<li>Conduct practice on not touching your face while working<\/li>\n<li>Provide masks to guests who arrive without them<\/li>\n<\/ul>\n<p><strong>Cleaning and sanitizing.<\/strong> <em>Buckle down on cleaning regularly and thoroughly:<\/em><\/p>\n<ul>\n<li>Follow instructions on cleaning products to assure effectiveness&nbsp;<\/li>\n<li>Train on the difference between sanitizing and disinfecting<\/li>\n<li>Sanitize counters, tables and chairs, including the edges, after each use<\/li>\n<li>Regularly wipe door knobs and pulls with sanitizing wipes<\/li>\n<li>Disinfect restrooms at least hourly, and chart the process<\/li>\n<li>Disinfect hard floors and deep clean carpets regularly<\/li>\n<\/ul>\n<p><strong>Customer contact. <\/strong><em>Reduce the risk of transmitting germs as people come and go:<\/em>&nbsp;&nbsp;<\/p>\n<ul>\n<li>Conduct temperature checks upon entry*<\/li>\n<li>Create a customer health questionnaire to be completed before entry*\n<ul>\n<li>*Ensure a second team member is there as a witness. For customers who raise red flags, offer takeout while they wait in their car<\/li>\n<\/ul>\n<\/li>\n<li>Offer cashless transactions<\/li>\n<li>Enforce safe social distancing at smoking areas outside your business<\/li>\n<\/ul>\n<p><strong>Food safety.<\/strong> <em>Don\u2019t overlook back-of-the-house food and equipment handling:<\/em>&nbsp;<\/p>\n<ul>\n<li>Educate your team on cleaning plates, utensils with proper detergents and temperatures<\/li>\n<li>Clean and sanitize all food-contact surfaces (shelves, prep tables, slicers, pots, etc.)<\/li>\n<li>Verify temperatures in coolers and freezers<\/li>\n<\/ul>\n<p><strong>Table safety.<\/strong> <em>Make sure your team and customers are aware of your table policies:<\/em><\/p>\n<ul>\n<li>Use disposable paper menus or sanitize laminated menus after every use<\/li>\n<li>Sanitize salt\/pepper shakers, condiment containers after every table turn<\/li>\n<li>Keep hand sanitizer at each table<\/li>\n<li>Eliminate communal condiment dispensers and drink dispenser stations<\/li>\n<li>Use wrapped straws<\/li>\n<\/ul>\n<p><strong>Pickup and delivery.<\/strong> <em>Continue to manage the safely of this vital part of your business:<\/em><\/p>\n<ul>\n<li>Establish prepay to speed pickup and eliminate unnecessary contact<\/li>\n<li>Create a curbside pickup zone to maintain social distancing<\/li>\n<li>For indoor pickup, dedicate an area for orders and mark safe spacing boundaries<\/li>\n<li>Offer touch-free delivery with sealed packages for tamper-proof assurance<\/li>\n<li>Keep hot foods hot and cold foods cold by using appropriate transport containers<\/li>\n<li>Verify third-party delivery services are meeting your standards<\/li>\n<\/ul>","protected":false},"excerpt":{"rendered":"<p>Establish some basics to
