Foodservice is among the areas adjusting to what\u2019s next. The challenge is maintaining safety while providing high-quality, nutritionally sound and delicious meals.<\/p>\n<p>As they <a href=\"https:\/\/www.cms.gov\/files\/document\/covid-flexibility-reopen-essential-non-covid-services.pdf\">comply with regulations<\/a>, foodservice managers are examining daily operations and service points, applying best practices to four primary areas:<\/p>\n<h2><strong>1. Menu planning<\/strong><\/h2>\n<p>The menu comes first because it affects many other decisions, such as equipment needs, new procedures, staffing levels and training. Facing possible staff size and food availability limitations, consider:<\/p>\n<ul>\n<li>Focusing on menu item guests enjoy most while streamlining variety<\/li>\n<li>Keeping the menu flexible to account for shortages<\/li>\n<li>Adjusting or eliminating \u201ccook-to-order\u201d options<\/li>\n<li>Trying grab-and-go menu options<\/li>\n<\/ul>\n<h2><strong>2. Back-of-house procedures<\/strong><\/h2>\n<p>Kitchens have close quarters and a lot of moving parts. Operating safely and efficiently is more important than ever.<\/p>\n<ul>\n<li>Increase frequency of cleaning and sanitizing<\/li>\n<li>Restrict staff allowed in the kitchen (i.e., separate culinary from servers)<\/li>\n<li>Set up a delivery cart disinfecting and sanitizing area<\/li>\n<\/ul>\n<h2><strong>3. Front-of-house procedures<\/strong><\/h2>\n<p>Follow the rules established by health experts and government officials when reopening dining areas.<\/p>\n<ul>\n<li>Communal dining\n<ul>\n<li>Redesign seating to comply with social distancing and occupancy rules<\/li>\n<li>Use a pre-order system to minimize the time guests spend in the dining area<\/li>\n<li>Screen guests before they enter the dining area<\/li>\n<\/ul>\n<\/li>\n<li>Self-service areas (if allowed, and you choose to keep self-service open)<\/li>\n<li>Assure sneeze guards are in place<\/li>\n<li>Assign a team member to dish out food<\/li>\n<li>Enforce using clean dishes on return visits<\/li>\n<li>In-room dining\n<ul>\n<li>Use a minimum-contact process to take meal orders<\/li>\n<li>Use portable carts with warming\/cooling chambers to transport meals<\/li>\n<li>Allow nursing staff to deliver meals and retrieve trays from COVID-19 care rooms<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<ul>\n<li>Retail\n<ul>\n<li>Remove tables and chairs and use signs for traffic flow<\/li>\n<li>Offer mobile ordering order-ahead process<\/li>\n<li>Use plexiglass barriers at checkout and offer touchless payment<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<h2><strong>4. Employee safety<\/strong><\/h2>\n<p>Now is the time to promote safety to prevent team members from risking their health and your ability to provide service to patients and residents.<\/p>\n<ul>\n<li>Screen employees before a shift according to your health policy<\/li>\n<li>Send them home if they exhibit or report symptoms. Follow the Centers for Disease Control\u2019s return to work policy for their return<\/li>\n<li>Reinforce personal hygiene and hand-washing
